What are the steps of making Malai Kofta recipe restaurant style?


Malai kofta curry is a popular vegetarian Indian dish made with soft, creamy koftas (dumplings) made with potatoes, paneer (cottage cheese), and a variety of spices. The koftas are cooked in a rich, tomato-based gravy. Typically, Malai kofta curry is served with rice and naan or other Indian bread. Ingredients:

For kofta:

  • 200 grams of paneer, grated
  • Two medium-sized potatoes, boiled and mashed
  • 1/4 cup bread crumbs
  • 1/4 cup corn flour
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coriander
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • Oil for deep frying

For gravy:

  • 2 medium-sized, finely chopped onions
  • 1 large, finely chopped tomato
  • 1 tbsp ginger-garlic paste
  • 1/2 cup fresh cream
  • 1/4 cup cashew nuts soaked in water for 30 minutes
  • 2 tbsp oil
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • 2 green cardamoms 
  • 2 cloves
  • 1 bay leaf
  • 1-inch cinnamon stick
  • 1 tsp red chili powder
  • 1/2 tsp garam masala
  • Salt to taste
  • Water as required

For garnish:

  • Freshly chopped coriander leaves
  • Fresh cream 

Instructions to make:

  1. Grated paneer, mashed potatoes, bread crumbs, corn flour, cumin, coriander, garam masala, red chili powder, and salt should all be well combined in a bowl before making the kofta.
  2. Make small balls of the mixture and deep fry them until golden brown in hot oil. Use a kitchen paper towel to drain and set aside.
  3. Add cumin seeds, coriander seeds, green cardamoms, cloves, bay leaf, and cinnamon stick to hot oil to make the gravy. Saute until fragrant for a few seconds.
  4. Sauté the chopped onions in the pan with the ginger-garlic paste until translucent.
  5. Cook the chopped tomatoes, cashews, garam masala powder, red chili powder, and salt in the pan until the tomatoes are soft and mushy.
  6. Allow the mixture to cool down after you turn off the heat. Use a blender to blend it into a smooth paste once it has cooled.
  7. Adjust the consistency of the blended mixture by adding water to the pan. After bringing it to a boil, simmer for 5-7 minutes.
  8. Mix the fresh cream into the gravy well. Cook for another two to three minutes.
  9. Add the koftas to a serving bowl and pour the gravy over them. Serve with fresh cream and chopped coriander leaves as a garnish.

You can now serve your delicious malai kofta curry. Serve it hot with some rice, naan, or roti. Kofta can be made with fish, beef, lamb, chicken, or other types of meat. It can also be made with vegetarian ingredients like lentils, chickpeas, or potatoes.
